BIOTECHNOLOGY RECEIPT AND DIRECTIONS FOR USE MINERALIZATA SERUM IN THE TECHNOLOGY OF MEAT PRODUCTS

Abstract

The article considers the question of fractionation whey using modern baromembrane methods. When electrodialysis treatment (desalination of whey) produced a significant amount of mineral components. The use of these natural mineral components can not only enrich the food, but also improve the functional and technological properties of food systems. This is due to the influence of salt in the form of lactate to the protein part of the product.
